Just got my 296 GTB delivery date for next month here in LA and i'm literally buzzing! im torn between the factory OEM carbon paddles and the ones from Capristo.
Should I go OEM or maybe check out Novitec instead?

Getting parts shipped from Europe that fast is always a gamble. If you want a perfect match, I would suggest looking at Ferrari Genuine Carbon Fiber Shift Paddles for 296 GTB. They are expensive but the weave and clear coat will match the rest of your interior perfectly. I tried some cheaper aftermarket stuff on my last build and the fitment was slightly off and it drove me nuts. If you dont want to pay the full factory tax, make sure to check out Novitec Carbon Fiber Shift Paddle Set Ferrari 296 GTB. Their quality is insane, but seriously, call a local shop like TAG Motorsports in OC to see what they have on the shelf. You dont want to be waiting for a shipping container when your car arrives.

TL;DR: Lead times suck. Re: Capristo Carbon Fiber Extended Shift Paddles Ferrari 296... everyone says OEM for speed or Capristo for reach. My last setup had 3mm gaps and mismatched weave. Be careful.
